Pumpkin halwa

Pumpkin halwa is an Indian sweet made during special occasions. This can be made with less effort, not like any other flour based halwa for which we need to put in some extra effort by keep on stirring the halwa. I used unrefined sugar for a healthier version. This delicious halwa can be paired up with a scoop of vanilla or butterscotch flavoured ice cream. And here is the recipe for pumpkin halwa.

INGREDIENTS

                ITEM                 QUANTITY
White Pumpkin 4 cups grated
Salt ¼ tsp
Sugar 1 cup heaped (Adjust as per taste)
Cardamom powder ½ tsp
Ghee 4 tbsp
Cashew nut 8 to 10 broken
Dry grapes 10

METHOD

1. Heat ghee in a pan and add grated pumpkin and salt. Sauté it and cook covered in medium flame for 10 to 15 mins. Stir once in a while in between.

2. Once the pumpkin gets cooked completely, add sugar and cardamom powder. Mix well and cook till the water gets evaporates.

3. Check the consistency of the halwa and add in ghee roasted cashew nuts and dry grapes. Mix well and serve.

Serve hot or chilled 🙂
