Bitter gourd Chips (Paagarkkai Chips/Karela chips)

I have tasted this bitter gourd chips only in bakeries that too years back. Since bitter gourd is one of our favourite veggie I just wanted to try this at home. It tasted good and I felt it’s a healthier one since it was homemade. Soon I will post another version of Paagarkkai chips which is yet simpler one.

                ITEM                 QUANTITY
Bitter gourd 2 medium
Besan flour/Kadalai maavu 2 tbsp
Rice flour 1 tbsp
Red chilli powder 1 tsp
Turmeric powder ¼ tsp
Salt As needed
Asafoetida/Hing powder ¼ tsp
Lemon juice from ½ big lemon
Curd/Yoghurt 2 tbsp (Adjust as per the moisture content in the sliced bitter gourd)
Oil For deep frying


1. Wash the bitter gourd and make slices in equal size. In a bowl add in the sliced bitter gourd, besan flour, rice flour, red chilli powder, turmeric powder, salt, asafoetida, lemon juice and curd. Mix well and keep it aside for minimum 15 mins.

2. Heat enough oil in a frying pan and drop in the marinated bitter gourd slices one by one without overcrowding the pan

3. Cook in medium flame by turning it once in a while. Remove from oil once the bubbles and shhh sound ceases. Drain in a kitchen tissue and serve.

* Discard the seeds if they are hard before marinating.

*Make thin slices using a knife or a slicer.

*Make sure the oil is hot enough before dropping in the marinated slices.

*Fry the bitter gourd in batches instead of overcrowding the pan.

*The chips becomes soggy by time so serve immediately or store in an air tight container once it comes to room temperature.
